This quick all-in-one cupcake recipe is great if you don’t have a lot of time for baking. It’s a fantastic little recipe to do with the children too as it’s so simple and very quick. If your children are anything like mine they want the cupcakes baked in record time and on the table ready to eat.
This is a great recipe as everything is put in to a mixing bowl and whisked at the same time. There’s no creaming the butter and sugar, no adding the eggs one by one, just throw it all in and mix. This recipe can be done with or without a mixer but a mixer makes life so much easier. You could whip up a batch of cupcakes in under half an hour , and that’s fast. The recipe says margarine but you can use softened butter if you prefer. I have tried both and to be honest I don’t really taste much difference.
Ingredients For The Quick All-in-One Cupcake Recipe
- 125g/4oz of caster sugar
- 125g/4oz of margarine (or softened butter if you prefer)
- 2 medium eggs
- 125g/4oz self-raising flour
- 1tsp of milk
- half tsp of vanilla extract

Method
- Preheat the oven to 190C/375F/Gas 5 or 170C if you’re using a fan assisted oven
- Line the cupcake tray with paper cases
- Place all of the ingredients into a bowl or mixer

- Beat for about 2 minutes until smooth and light

- half fill the paper cases and bake for around 12 minutes

- Cool in the tray for 5 minutes then on a wire rack until fully cooled
- when cooled decorate with buttercream or icing
