Cadbury Caramel Egg Cheesecake

A cadbury caramel egg cheesecake

If there’s four words that go together so well, it’s ‘Cadbury Caramel Egg Cheesecake’. This yummy dessert tastes as good as it sounds. It has a base of Cadbury chocolate digestives topped off with chopped Cadbury Eggs so what’s not to love.

Ingredients For Cadbury Caramel Egg Cheesecake

Biscuit Base
  • 300g/10oz Cadbury’s milk chocolate biscuits (you can also use dark chocolate biscuits
  • 100g/3.5oz Melted unsalted butter
Cheesecake Filling
  • 750g/26.5oz of full fat cream cheese (Philadelphia or Mascarpone works well)
  • 100g/3.5oz of icing sugar, sieved
  • 300ml of double cream
  • 2tsp of vanilla extract
  • 150g/5.5oz of easter egg, roughly chopped
Topping
  • 250ml of double cream
  • 2 tablespoons of icing sugar
  • Chocolate, grated
  • Cadbury Caramel eggs, chopped

Method

For the Base
  • Blitz the Biscuits in a food processor to a fine crumb, or with a rolling pin in a food bag. 
  • Melt the butter so its liquid, and mix in with the Biscuits. I usually do this in the Food Processor and blitz again. 
  • Press the Biscuit mixture into the bottom of an 8″/20cm Springform Deep Tin, and refrigerate/freeze while you make the filling.
For the Cheesecake
  • Add the Cream Cheese to a Large Bowl, or Stand Mixer with the Icing Sugar and the Vanilla and whisk until it’s smooth. I use my K mix with its balloon whisk attachment, or you could use a hand held electric whisk.
  • Whisk on a medium speed, until the sugar is mixed into the cream cheese, and the ingredients are evenly distributed. This usually takes around 15-25 seconds.
  • Add in the double cream, and whisk the mixture till it comes together and becomes thick. 
  • I usually mix it on medium, It’s best to under whisk rather than over whisk. If in doubt, whisk a little, and then mix with a spatula to finish off.
  • Add the chopped chocolate and stir in until evenly mixed
  • Once whisked, add the Cheesecake mixture to the top of the biscuit base, and set it in the fridge for 5-6 hours, or preferably overnight. 
The Topping
  • Whisk together the Double Cream and Icing Sugar until it’s thick enough to pipe
  • Top the cream topping with Cadbury caramel eggs chopped and grated chocolate then serve.
  • Grate the chocolate over the top to finish off, your cheesecake is now finished.
