Finally a pancake recipe that actually works. I’ve used this simple American pancakes recipe many times and every single time they have come out light, fluffy and tasting great. Even the kids could make them they are that easy. The beauty of pancakes is the ingredients are store cupboard usuals. I always have them sitting in the cupboard waiting to be turned into a plate of tasty American pancakes.
American Pancakes can be made savoury or sweet, the choice is yours. Try adding chocolate chips, berries or banana. They can also be served with crispy bacon and maple syrup. Another way to serve them would be a side on a tasty Scottish breakfast.
INGREDIENTS
- 140 grams of Plain Flour
- 2 tbs Caster Sugar
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 130 ml of Milk
- 1 Large Egg
- 2 tbs of Melted Butter
METHOD
- Sieve the flour and baking powder in a deep mixing bowl.
- Stir in the sugar and salt.
- Whisk the eggs, milk and melted butter in a jug.
- Slowly whisk the wet ingredients to the dry. If you do this slowly and whisk well each time you shouldn’t get a lumpy batter.
- Melt a small amount of oil in a non stick frying pan on a medium heat.
- Slowly pour in a little batter trying to keep it in a circle shape. This is easier said than done but practice makes perfect.
- After a minute or so you will notice small bubbles appearing on the top of the pancake, this means they are ready to be flipped over.
- Cook for a minute on the other side then serve immediately either in their own or with maple syrup.

Chocolate Chip American Pancakes
If you prefer to add chocolate chips or fruit you can either add it to the batter or sprinkle it on the pancake when you pour it in the frying pan. I found the latter so much easier than adding it to the batter. Give these American pancakes a go, you will be surprised how easy they are.
