You cant beat a bowl of hot homemade soup. This recipe for the Ninja Courgette and Sweet Potato Soup is so simple. With only a few ingredients you can be sitting down to a wholesome, tasty bowl of soup in just half an hour.
You don’t have to make it in a ninja soup maker, any soup maker would do the same job just as well. You can also add other things to this recipe like garlic, ginger and spices. Swap out some of the courgettes for carrot or the sweet potato for white potato.
Soup is so versatile, as long as you remember to take part of the ingredients out to add another. If you’re making it in a pan there is no need to swap one for another. Always fill to the max line, if you over fill your soup will spill out of the lid when your soup maker blends.
Serve with a lovely chunk of wholemeal seeded bread
Ingredients For Ninja Courgette and Sweet Potato Soup
- 1 small onion cut in to quarters
- 2 medium courgettes cubed
- 1 large sweet potato cubed
- 750 ml of vegetable stock
- Salt and pepper to taste
- I also use a dash of Knorr rich vegetable Vegetable liquid seasoning but this is optional.


METHOD
When your ninja has finished chopping push any onion from the sides to the bottom and select sauté. This usually takes around 5 minutes.
When 5 minutes are up add the courgette and sweet potato plus the stock to the jug and select the smooth soup option.

Make sure your ingredients and stock don’t go over the maximum line otherwise your soup will leak out from the lid when blending.
This will take 30 minutes to cook and blend. If your soup is too thick just add more stock to thin it out, taste and add salt and pepper if needed.
