I love making chocolate chip brownies for the family. They are so quick and easy to make and go great with a nice cup of tea for an afternoon snack. They are also great for the kids lunchbox, it’s always a nice treat for them when they open their lunch box. Get the kids involved, it’s a great way to teach them cooking and baking skills at a young age. It’s something they will carry in to adulthood.
Homemade is definitely the way to go, you know exactly what goes in to them. No nasty chemicals and preservatives that seem to be in most shop bought things these days. This chocolate chip brownie recipe is a great store cupboard recipe. The hardest part is not over baking them. They should be moist in the middle. If over baked they can become heavy and pretty dry. Ingredients To Make 24 Chocolate Chip Brownies
- 115g Plain Chocolate
- 115g Butter
- 3 Eggs
- 200g Sugar
- 1/2 tsp Vanilla Essence
- Pinch of Salt
- 140g Plain Flour
- 170g Chocolate Chips
Method
- Melt the chocolate and butter in a heatproof bowl over a pan of simmering water
- Beat together the eggs, sugar, vanilla and salt
- Stir in the chocolate mixture, sift over the flour and fold in
- Add the chocolate chips
- Pour the batter into your prepared tin and spread evenly
- bake until just set, check at about 15 minutes. Don’t over bake the brownies as they should be slightly moist inside
- Cool them in the pan
- To turn them out run a knife all around the edge, put a baking sheet on the top and tip over
- remove the paper and cut into squares for serving
