Ninja Sweet Potato & Butternut Squash Soup

I love my Ninja Blender and Soup Maker and use it every day. The Ninja sweet potato & butternut squash soup recipe is one of my favourites. It’s healthy because of the vegetables and the olive oil. This is certainly a soup you should make for a cold, miserable afternoon.

Ingredients For Ninja Sweet Potato & Butternut Squash Soup

  • One onion, quartered
  • One tbsp of olive oil
  • One large carrot, cubed
  • Half a butternut squash
  • Two large sweet potatoes
  • 750-800ml of stock
  • One tbsp of turmeric (optional)

Method

  1. put the quatered onion in the Ninja with the olive oil and press chop
  2. Once chopped press saute
  3. When the saute has finished add the carrot, sweet potato, butternut squash and stock and press smooth soup
  4. 5 minutes before the end of the programme add the turmeric.
  5. The Ninja will automatically blend your soup for the final minute
  6. When the soup is finished, switch off the machine and serve your soup or leave it one to keep warm
  7. Serve with a large crust of fresh bread
